If you've never had this before, you are in for one of the treats of your life. I eat it at least once or twice a month because it's spicy and nothing could be simpler to prepare.
1 whole chicken, cut up
3 Tbl (50mL) jerk marinade (see sauces) or prepared wet jerk seasoning
Apple cider vinegar
1. Parboil chicken pieces in 2/3 water and 1/3 apple cider vinegar
for 20 minutes. Place chicken on a platter and discard the liquid. Remove chicken skin and marinade with jerk for at least 30 minutes.
2. Grill over low or indirect heat for 20-25 minutes. Chicken should just be turning crispy but not overcooked.
