Jerk Recipes
Jerk Cabbage Soup
Cabbage soup is easy to make, filling and quite delicious. This yields 4 servings.
1/2 cabbage, diced
1-1/2 pints water with chicken boullion
2 oz sliced pepperoni
2 tsp (10mL) parsley flakes
2 carrots, diced
1 Tbl (15mL) olive oil
1 Tbl (15mL) flour
1 tsp (5mL) dry jerk seasoning (optional)
salt & pepper to taste
1. Saute onion and carrots in olive oil until onions are wilted. Add cabbage and parsley. Simmer for 5 minutes.
2. Blend in flour and cook another 2-3 minutes. Then add chicken boullion and dry jerk seasoning and mix thoroughly. Simmer 20-25 minutes.
3. Add pepperoni slices, salt and pepper. Simmer another 5 minutes. Serve.
