Fried Jerk Chicken Recipe

This is not a Jamaican recipe but one adapted for those of us in the U.S. who also like our chicken fried once in a while.

FRIED JERK CHICKEN 

The meat will fall off the bone when this has finished cooking, and you may fall off your camp stool once you taste it.  A cover is need for the skillet, or use a Dutch oven.

1 chicken cut up and skin removed
1 cup (250mL) water
4 tsp (30mL) dry jerk seasoning
      or 2 tsp (10mL) jerk paste (See Making Jerk Seasoning if necessary)
2 onions, chopped
2 Tbl (25mL) rum
1/2 cup (125mL) soy sauce

1. Combine all spices in the skillet and bring to a boil.  Add the chicken.  The liquid should just barely cover the chicken. 

2. Bring to a boil again, then cover and simmer for 20 minutes.

3. Turn the chicken and simmer for another 20 minutes.
