Jamaican Jerk Recipes
Spicy Fried Potato Rolls
Like fried potatoes? But sick of bland, day-old French fries? These potatoes with Jamaican jerk seasoning have incredible taste. Serves 4.
6-8 medium potatoes
1 Tbl (15mL) coriander
1 medium onion finely chopped
1/2 tsp (2mL) ground ginger
1/4 tsp (1mL) wet jerk seasoning
1 Tbl (15mL) lemon juice
2 cups (500mL/6oz) flour
Salt and pepper to taste
Cooking oil.
1. Cook potatoes and mash. Add everything but flour and mix thoroughly.
2. From the potato mix, form about 20 balls of equal size.
3. To the flour, mix in enough water to create paste of medium consistency. It should not be runny like milk. Add salt and pepper to taste.
4. Heat the oil hot enough for deep-frying (medium heat is fine since everything is already cooked). Dip each potato ball into the flour and add it to the frying pan. Cook until a golden brown.
